Fried Burbot

Burbot is a fish we catch during the winter through the ice. I've never caught it in the summertime. It's a delicious white meat fish that looks similar to a catfish. It's also delicious fried like catfish. Take fillets and shake them in a bag of flour salt and pepper. Take the lightly coated fillets and add them to a frying pan with a 1/2 inch coating of medium hot olive oil. Fry until browned on one side and then turn to the other side and fry until browned on the other side. I add a little additional salt. Remove from pan and drain on paper towels. That's it! It's ready to eat. I like to make a homemade tartar sauce to go with it. Take 1/2 cup of Best Foods mayonaise and load it up with chopped onions and chopped dill pickle. It's the perfect accompaniment. Enjoy!
